✔ Bold, sweet-savory miso glaze
✔ Made with convenient instant miso powder

✔ Restaurant-quality flavor at home

Ingredients (Serves 2–3)

Pork Cutlets

  • 2–3 slices CJ Prime Pork Loin

  • Salt & black pepper

  • ½ cup all-purpose flour

  • 1 egg, beaten

  • 1 cup panko breadcrumbs

  • Vegetable oil for frying

Instant Miso Glaze

  • 1 pack of Hanamaruki Instant Miso

  • 2–3 tbsp hot water (start small)

  • 1–2 tbsp sugar (adjust to taste)

  • 1 tbsp mirin

  • ½ tsp soy sauce (optional, for depth)

Instructions

1. Prepare the Pork

Lightly pound the CJ Prime Pork Loin to an even thickness (about ½ inch).
Season both sides with salt and pepper.

2. Bread the Cutlets

Set up three bowls: flour, beaten egg, and panko.

  1. Coat pork in flour (shake off excess)

  2. Dip into egg

  3. Press firmly into panko until fully coated

3. Fry Until Golden

Heat oil to 350°F (175–180°C).
Fry cutlets 3–4 minutes per side until golden brown and cooked through.
Transfer to a rack or paper towel to drain.

4. Make the Instant Miso Glaze (Important Step)

Because this is powder miso, concentration matters.

  1. In a small bowl, mix miso powder with just enough hot water to form a thick paste (not soup consistency).

  2. Stir in sugar and mirin.

  3. Pour into a small saucepan and simmer gently for 1–2 minutes until slightly thickened.

The result should be a glossy, thick glaze that clings to the pork.

5. Assemble

Slice the crispy pork into strips.
Drizzle miso glaze over the top or serve on the side for dipping.

Serve with:

  • Steamed white rice

  • Shredded cabbage

  • Lemon wedges

Pro Tips for Perfect Miso Katsu

  • Use minimal water when dissolving instant miso — you want a glaze, not soup.

  • Simmer briefly to concentrate flavor.

  • Adjust sugar depending on how sweet you prefer your sauce.

  • Double-coat with egg and panko for extra crunch.
