Oxtail Stew: A Hearty Korean Delicacy

Oxtail stew, known as “Sokkorijjim” in Korea, is a rich and flavorful dish cherished for its depth of taste and nutritional benefits. Traditionally enjoyed as a health-boosting meal, this stew combines tender oxtail pieces simmered in a savory sauce, making it a perfect comfort food or accompaniment to a glass of soju.

For the Sauce:

7 tablespoons soy sauce

1 tablespoon sugar

1 tablespoon oligosaccharide (or corn syrup)

1 tablespoon minced garlic

2 tablespoons cooking wine

1 teaspoon sesame oil

A pinch of ground black pepper


Instructions:

1. Prepare the Oxtail:

Soak the oxtail pieces in cold water for approximately 2 hours to remove excess blood.

Drain and rinse the oxtail under cold running water.

2. Initial Boil:

Place the oxtail in a large pot, cover with fresh water, and bring to a boil.

Optionally, add a splash of soju or cooking wine to help eliminate any gamey odor.

Boil for a few minutes, then drain and rinse the oxtail to remove impurities.

3. Prepare the Sauce:

In a bowl, combine soy sauce, sugar, oligosaccharide, minced garlic, cooking wine, sesame oil, and ground black pepper.

Mix well until the sugar is fully dissolved.

For added flavor, stir in chopped green onions and sliced green chili peppers if desired.

4. Marinate the Oxtail:

Place the cleaned oxtail pieces in a large bowl or pot.

Pour the prepared sauce over the oxtail, ensuring each piece is evenly coated.

5. Cook the Stew:

Using a Rice Cooker:

Transfer the marinated oxtail and sauce into the rice cooker.

Set the cooker to the ‘Cook’ or ‘Stew’ function and let it cook for about 40 minutes.

Using a Stovetop Pot:

Place the oxtail and sauce into a large pot.

Add enough water to cover the oxtail.

Bring to a boil over medium-high heat, then reduce to low heat.

Cover and simmer for 2 to 3 hours, or until the meat is tender and the sauce has thickened.

6. Serve:

Once cooked, transfer the oxtail pieces and sauce to a serving dish.

Garnish with additional chopped green onions or sesame seeds if desired.

Serve hot, accompanied by steamed rice and kimchi for a complete meal.
