Background and History:
Janchi-guksu, or “banquet noodles,” is a traditional Korean dish often served during celebrations such as weddings, birthdays, and other important events. The long noodles symbolize longevity and prosperity, and the dish is known for its comforting warmth. Although made with simple ingredients, it carries a deep cultural significance in Korean gatherings.
Ingredients (serves 4):
- 300g somyeon (thin wheat noodles)
- 20 dried anchovies (for broth) and 1 piece of dried kelp (5x5 cm)
- 2 tablespoons soy sauce
- Salt (to taste)
- 1 teaspoon minced garlic
- Toppings: egg strips, zucchini, carrots, seaweed flakes, green onions

- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 teaspoon minced garlic
- A pinch of pepper

Prepare the Broth: In a pot, add 6 cups of water, anchovies, and kelp. Bring to a boil. Remove the kelp once the water boils and simmer the broth with anchovies for another 10 minutes. Strain the anchovies and season with soy sauce, minced garlic, and salt.

Prepare the Minced Meat (optional topping):
In a pan, heat sesame oil over medium heat. Add minced garlic and stir for 30 seconds, then add the minced beef or pork. Stir-fry until fully cooked, then season with soy sauce, sugar, and pepper. Set aside.

Prepare the Toppings: Make egg strips by beating eggs and frying them in a thin layer, then slicing them. Julienne the zucchini and carrots, and lightly sauté with a pinch of salt.

Cook the Noodles: In a separate pot of boiling water, cook the somyeon for about 3-4 minutes. Rinse under cold water to remove excess starch, then drain.

Assemble the Dish: Place the noodles in a bowl, pour the broth over them, and top with egg strips, zucchini, carrots, seaweed flakes, and green onions. Optionally, sprinkle some red pepper flakes and a few drops of sesame oil.
