Sarte Suyuk(Boiled Beef Shank) Recipe – Perfect Comfort Food for Chilly Days

When the temperatures start to drop, there’s nothing more comforting than a warm, hearty meal to nourish both body and soul. Sarte Suyuk, or boiled beef shank, has long been a favorite in Korean cuisine, celebrated for its simple preparation and deeply satisfying flavors. Traditionally enjoyed during family gatherings or special occasions, this dish is rooted in sharing warmth and comfort. The tender, succulent beef, cooked in a rich broth, makes it the perfect dish to savor as the weather turns cold.

Ingredients:

Green Onion: 1.5 stalks
Garlic: 10 cloves
Ginger: 1 piece
Onion: 1 (divided)
Cheongyang Chili Peppers: 2
Garlic Chives (Buchu): 1/2 bunch
Enoki Mushrooms: 2 packs
Soy Sauce: 10 tablespoons
Vinegar: 4 tablespoons

Instructions:

1. Prepare the Beef: Soak 450g of beef shank in water for 3 hours to remove excess blood.

2. Make the Dipping Sauce: Mix 10 tablespoons of soy sauce and 4 tablespoons of vinegar to create the dipping sauce. Chop 1/2 an onion and 2 Cheongyang chili peppers, and add them to the sauce. Refrigerate the sauce for 3 hours to allow the flavors to meld.

3. Boil the Beef: Place the soaked beef shank in a pot. Add 1/2 an onion, 1.5 stalks of green onion, 10 cloves of garlic, and 1 piece of ginger. Pour in enough water to cover the beef.

4. Cook the Beef: Bring the pot to a boil over high heat, then reduce to medium heat and simmer for about 2 hours. Ensure the beef remains tender and does not become tough. The meat will start out firm but will become tender as it cooks. Check occasionally to ensure there’s enough water in the pot.

5. Slice the Beef: Once the beef is fully cooked and tender, remove it from the pot and slice it into bite-sized pieces.

6. Prepare the Vegetables: Rinse 1/2 bunch of garlic chives and 2 packs of enoki mushrooms. Place them in a hot pot (jeongol pot), then add enough beef broth to cover the enoki mushrooms. Bring to a boil.

7. Serve: Arrange the sliced beef shank on top of the enoki mushrooms and garlic chives in the hot pot. Serve the dish warm with the soy sauce dipping sauce, including the marinated onion and chili peppers for added flavor.
